Gabriel Boutet is a small family house in Cumières, in the Vallée de la Marne, close to Hautvillers and Épernay. The Boutet brand was founded in 1896 by two brothers who had come to Champagne from the Creuse in 1860. After the death of Gabriel Boutet in 1971, his son-in-law Claude Millet began selling his entire production himself. Today the house is run by winegrower Luc Millet and Patricia, with their son Charles, a botanist and nature guide.
Vineyards The roughly 3 hectares lie on the slopes along the Marne, below the abbey of Hautvillers, on Cretaceous limestone soil; two thirds are premier cru. Pinot Noir dominates, alongside Chardonnay and Meunier.
Approach Since 1994 the grapes have been pressed at the Coopérative Louis Dupont in Cumières; blending and bottling take place at Union Champagne in Avize. The non-vintage brut ages on the lees for 3 to 5 years on average, the vintages for 5 to 14 years.
