Gabriel Fresne is a champagne house in Brugny-Vaudancourt, on the Coteaux Sud d'Épernay. It was founded by Gabriel Fresne, who comes from a family of récoltants-manipulants.
Vineyards The vineyard is spread over six communes: 70% on the Coteaux Sud d'Épernay (Brugny-Vaudancourt, Vinay, Chavot, Morangis) and 30% in Marfaux and Pourcy. Meunier dominates with 80%, followed by Chardonnay (15%) and Pinot Noir (5%). The house practises integrated pest management, and harvesting is still done by hand.
Approach Each stage of vinification is given the time it needs, including alcoholic and malolactic fermentation. The wines are filtered before tirage and age for at least 4 years on the lees; about six months before sale they are riddled, disgorged and dosed.
