Champagne Collery is a historic champagne house based in Aÿ, founded in 1893 by Jules-Anatole Collery, a pioneer who was one of the first growers to turn his own grapes into champagne and market it. The brand was later developed by his children Pierre and Geneviève, and later by Jean and Alain Collery, with Alain founding one of the first champagne museums in the 1970s. After a period of inactivity in the 1990s, the house was taken over in 2014 by Nicolas Gueusquin (Les Roches Blanches group), who ushered in a renewal with a new headquarters in Aÿ and a focus on premium Grand Crus.
Production revolves entirely around Grand Cru vineyards, with a strong emphasis on Pinot Noir, the dominant grape in Aÿ, complemented by Chardonnay. The approach includes vinification on the lees in wooden foudres or inox cuves, with the champagnes usually blended with approximately 20% reserve wines kept in foudres. The method is characterised by precision in blending to emphasise the typicity of the soil, with respect for tradition and a modern approach to viticulture.
Collery's champagnes include:
- NV Brut Grand Cru: A blend of mainly Pinot Noir (80%) and Chardonnay, with 30% reserve wines from foudres; ages 48 months.
- NV Rosé Brut Grand Cru: A blend with 89% Pinot Noir (of which 12% red wine), ages 36 months; fruity with red berries.
- Blanc de Blancs Brut Grand Cru: Made from Chardonnay, partly vinified in barrels, ages 5 years; fresh with white fruit and brioche notes.
- Extra Brut Blanc Grand Cru: An elegant, dry white champagne with pure fruity and mineral notes.
- Millésimés: Such as the EmpyreumatiC, a vintage champagne (e.g. 2014) that highlights the quality of a specific year.
The house also offers wine tourism, including tastings, a champagne bar, terraces and accommodation in a historic building, with an emphasis on experiencing the history and craftsmanship behind each bottle.
