History: Champagne Cazals is a family business founded in 1897 by Ernest Cazals, a cooper from the Languedoc. The house is currently run by Delphine Cazals, the fourth generation, and is known for the innovation of the Gyropalette system for riddling bottles, invented by her father Claude.
Vineyards: The 9 hectares of vineyards lie exclusively in Grand Cru and Premier Cru areas of the Côte des Blancs (Le Mesnil-sur-Oger, Oger, Vertus, Villeneuve). The base is 100% Chardonnay, with the exception of the Rosé, which contains Pinot Noir from Verzenay. The house owns the rare Clos Cazals, a 3.7-hectare walled vineyard in Oger with a unique microclimate, whose wines often age on the lees for 10 years or longer.
Approach: The philosophy centres on terroir expression and minimal intervention, with HVE certification (Haute Valeur Environnementale). Vinification emphasises finesse and purity, using stainless steel tanks (inox cuves) and moderate oak to preserve the minerality and acidity of the Chardonnay, with little added sulphur.
Champagnes: The core range consists of Blancs de Blancs (exclusively Chardonnay). Important cuvées are:
- Clos Cazals: A prestigious, monopole cuvée from the walled vineyard (100% Chardonnay, often 10+ years of ageing).
- Chapelle du Clos: A single-plot cuvée from younger vines within the Clos, sometimes with oak ageing.
- Cuvée Vive and Carte Or: Accessible, fresh Blancs de Blancs for everyday enjoyment.
- Rosé XV: A blend of Chardonnay from the Côte des Blancs and Pinot Noir from the Montagne de Reims.
- Soléra: A non-vintage blend from a perpetual reserve wine.
