History: The champagne house Cazé-Thibaut, based in Châtillon-sur-Marne in the Vallée de la Marne, is run by Fabien Cazé, the tenth generation in a family of winegrowers. The first bottle of champagne was put on the market in 1953 by Roger Cazé, who also created the name Cazé-Thibaut. Fabien took over in 2007 and started his first own vintage champagne in 2013, after a period of transformation to organic viticulture.
Vineyards and Approach: The estate covers 2.58 hectares spread over the villages of Châtillon-sur-Marne and Vandières on the right bank of the Marne. The vineyards have been certified organic since 2018, with a complete ban on herbicides and insecticides. The grapes are harvested by hand and vinification takes place in oak barrels with spontaneous fermentation and indigenous yeast. The champagnes age 24 to 72 months on fine lees (lies fines) and are neither filtered nor fined, with a very low dosage to preserve the pure taste of the terroir.
Champagnes: The portfolio includes a few specific cuvées that reflect the diversity of the terroirs:
- Naturellement: 100% Pinot Meunier, extra brut, vinified in barrels and stainless steel tanks.
- Les Fourches: 100% Chardonnay, extra brut, from a south-facing plot in Vandières.
- Jossias: 100% Pinot Noir, extra brut, a small production that highlights the power of the black grape.
- Les Lériens: A blend of Chardonnay, Pinot Meunier and Pinot Noir, aimed at complexity and balance.
- Cramant: A grand cru cuvée consisting of 100% Chardonnay, highly rated by critics.
Total production is small, ranging between 14,000 and 20,000 bottles a year, and the champagnes are mainly distributed to professional traders (cavistes and restaurants).
