Champagne André Beaufort is a family estate in the grand cru village of Ambonnay in the Montagne de Reims, with additional vineyards in Polisy in the Aube. The estate is owned by the Beaufort family, who grow the grapes and make the champagnes themselves.
- History: Patriarch Jacques Beaufort stopped using synthetic agricultural chemicals in 1970; the estate has been farmed organically since the early 1970s. He was an early advocate of essential oils in the vineyard. His son Amaury Beaufort left the estate in 2018 to make his own champagne.
- Vineyards and terroir: The vineyards lie in Ambonnay and in Polisy, in the Côte des Bar south-east of Troyes. The clay soils of Polisy make those plots harder to farm than the parcels in Ambonnay.
- Approach and style: Homeopathy and aromatherapy have been used against fungal diseases such as downy mildew, reducing the need for copper and sulphur. Disgorgement is done by hand 'à la volée', without freezing the neck of the bottle.
- Cuvées: The two pillars are the Grand Cru Ambonnay and the Polisy wines, including the Ambonnay Grand Cru Brut Nature, Réserve and Rosé and the Polisy Brut Nature Réserve and Rosé.
