Champagne Amaury Beaufort is the personal project of Amaury Beaufort, a member of the Beaufort winegrowing family known for its early organic approach in Ambonnay and Polisy. His champagne comes from Polisy in the Aube.
- History: Amaury left the family estate and set up his own structure in 2018. He released his first champagne under his own name from a single parcel.
- Vineyards and terroir: The Le Jardinot parcel in Polisy covers 0.88 hectares on Kimmeridgian clay-limestone soils. The vines are farmed organically and biodynamically.
- Winemaking and style: The wine ferments with indigenous yeasts, is made without added sulphur and is aged in barrels before the second fermentation. The champagne is bottled with no dosage (Brut Nature).
- Cuvées: Les Jardinots (also spelt Le Jardinot) is a vintage champagne dominated by Pinot Noir. Production is small, at around 6,000 bottles a year.
