Champagne Allouchery-Perseval is a family business in Écueil (Montagne de Reims), where the vineyards have been worked for four generations under the leadership of Émilien Allouchery. The 8 hectares of Premier Cru vineyards, planted with Pinot Noir and Chardonnay, are certified as farmed according to HVE (Haute Valeur Environnementale) and VDC (Viticulture durable en Champagne).
The winemaking combines tradition and modernity, with the grapes vinified separately in temperature-controlled stainless steel tanks. Ageing takes place in bottle on the lees (between 2 and 9 years, depending on the cuvée), but also in barrels and tanks for certain selections, with mechanical riddling and disgorgement by freezing.
The product portfolio includes various Premier Cru champagnes:
- Le Tradition Brut: 100% Pinot Noir, 2-3 years of ageing.
- La Réserve Brut: 60% Pinot Noir / 40% Chardonnay, 5-6 years of ageing.
- Millésime: Vintages (e.g. 2016, 2013) with high scores (up to 93/100), often 60/40 blends.
- Ellipse: 100% Chardonnay (Blanc de Blancs).
- Epilogue: Certified biodynamic and living wine (Living Wine), such as the 2016 rosé vintage.
Visitors can visit the cellar, buy the champagnes on site and stay in the gîte (up to 8 people).
