Saulcy is a small wine village in the Aube department (10), in the Côte des Bar, in the Bar-sur-Aubois near Bar-sur-Aube. The village has no cru status.
- Vineyards: as throughout the Côte des Bar, pinot noir is the main grape, complemented by chardonnay. The vineyards lie on calcareous marl.
- Character: the champagnes are ripe and fruity, with the power and red fruit of pinot noir.
- Producers: those working in Saulcy include Olivier Mougin; Champagne James Geoffroy also has its business here.
The Côte des Bar is the southernmost part of the champagne region. In the Middle Ages, Bar-sur-Aube was one of the towns of the famous Champagne fairs.
