Champagne Olivier Mougin is a Récoltant-Manipulant located in Saulcy, in the heart of the Côte des Bar (Aube), between Colombey-Les-Deux-Églises and Bar-sur-Aube. The business has been managed for three generations by Olivier and his wife Laurence Mougin.

History and Vineyards The estate covers four hectares of vineyard. The family harvests and vinifies their own grapes, working with the three traditional Champagne cépages: Pinot Noir, Pinot Meunier and Chardonnay. The blending of these grapes forms the basis for the various cuvées.

Approach and Certifications The viticulture is managed according to the principles of viticulture raisonnée (balanced viticulture). The estate is certified at the highest level, HVE level 3 (Haute Valeur Environnementale), which indicates that strict work is done to respect the environment.
