Serge Boutillat is a family estate in Chaumuzy, in the Vallée de l'Ardre. Its wine-growing tradition goes back to 1765, when Thomas Pistat was already growing grapes on the slopes above the village. In 1900 Léa Pistat married Amédée Boutillat; they began vinifying themselves and sold champagne under the name Boutillat Pistat. Serge Boutillat, born in 1947, the year the Chaumuzy cooperative was founded, later became president of that cooperative. In 1975 Serge and his wife Eliane Dautreville began selling Champagne Serge Boutillat. Today Cédric, Adeline and Emilien, the tenth generation, carry on the work.
Vineyards The estate has 5 hectares in 48 plots on the slopes above Chaumuzy and Bouilly, with an average vine age of 40 years; the oldest plot was planted in 1950. Meunier accounts for more than 90% of the plantings. Most of the work, including the harvest, is done by hand and no insecticides are used.
