History The champagne house Salon was founded in 1905 by Eugène-Aimé Salon, who initially produced his champagne for personal use. The commercial activity began in 1920, after which the house style developed into a must in the 1920s, including at the restaurant Maxim's. The evolution of ownership included periods under Dubonnet and Pernod-Ricard, until the house was taken over in 1988 by Laurent-Perrier, with Didier Depond as president.
Vineyards The production is strictly tied to the Côte des Blancs and specifically the grand cru Le Mesnil-sur-Oger. The vineyard area covers 10 hectares, divided into a core plot of 1 hectare ("Le Jardin de Salon") and 19 smaller plots. The soil is rich in chalk, which contributes to the characteristic freshness and elegance of the wines.
Working methods Salon follows a unique production policy in which there is no blending of different wines, years or regions. It is produced exclusively in exceptional years (only 37 times in the 20th century), with vinification stopping entirely at the use of chardonnay. The champagne rests on average ten years on the lees in the cellars of Le Mesnil-sur-Oger before it is disgorged and brought to market, resulting in a complex and fine structure.
Champagnes The house produces only one cuvée: Champagne Salon, a Blanc de Blancs made from 100% Chardonnay. This champagne is always millésimé (vintage) and bears the name of the village Le Mesnil-sur-Oger. Well-known and highly rated vintages include 1905, 1990, 1996, 1997, 1999, 2002, 2004, 2006, 2007, 2008 and 2015. Production is extremely limited, at approximately 25,000 bottles per millésime, which underlines its rarity and premium status.
