Champagne Salima & Alain Cordeuil is a small organic grower estate in Noé-les-Mallets, east of Landreville in the Côte des Bar, in the far south of Champagne.
- History: Alain Cordeuil returned to the family business in 2006 to learn the trade. In 2011 the couple took over the vines and began converting to organic farming.
- Vineyards and terroir: The estate has just over 4 hectares of Pinot Noir and Chardonnay, on some of the highest slopes in Champagne, around 300 metres above sea level.
- Approach and style: The estate has been certified organic since 2015. Horses are used in the vineyards. The wines ferment spontaneously, age four to five years on the lees and are bottled without dosage and with little or no added sulphur. Production is around 10,000 bottles a year.
- Cuvées: Origines is aged entirely in stainless steel; the single-plot and single-variety cuvées age in tank and large foudres. Altitude is a Pinot Noir from a single high-altitude plot. Clair Obscur is made from 65% Pinot Noir and 35% Chardonnay.
