Champagne Rouillère Fils is a family business based in Baslieux-sous-Châtillon (Marne, France), founded in 1935. The current operation is run by Hervé and Thérèse Rouillère (for 30 years) and their son Romain, who continue the father-to-son tradition.
- Vineyards: The estate manages approximately 4 to 4.5 hectares of vineyards spread over the villages of Baslieux-sous-Châtillon, Jonquery, Venteuil and Courthiézy. The soil consists of chalk, limestone and sand, which offers ideal conditions for the three traditional grape varieties: Pinot Noir, Pinot Meunier and Chardonnay.
- Working methods: The winemaking follows the Champagne method in a modern cellar. After alcoholic and malolactic fermentation, the wine is aged for 8 months in stainless steel tanks. The process includes mechanical riddling with a gyropalette and ice dégorgement (dégorgement à la glace) to remove the sediment without fining.
- Champagnes and Products: The range consists of Brut, Brut Blanc, Extra Brut and a Cuvée Symphonie Rosé. In addition, the house produces Ratafia and Marc de Champagne.
- Oenotourism: The estate offers wine tastings and chambres d'hôtes (guest rooms) in a renovated family home with a large reception veranda. Visits are possible at 5 rue du Vieux Moulin, 51700 Baslieux-sous-Châtillon.
