Champagne Piollot is a family grower estate in Polisot, in the Côte des Bar in the Aube département.
- History: The estate's history goes back to the nineteenth century; Athanase Piollot (1817-1906) was the family's first winemaker. Today Roland Piollot, the fifth generation, runs the estate.
- Vineyards and terroir: The estate farms about 8.5 hectares.
- Approach and style: The estate has been certified organic since 2014 and also follows biodynamic principles.
- Cuvées: Les Protelles is a rosé, mainly from pinot noir, made with a short maceration that brings out the fruit, with aromas of fresh red fruit and flowers. The range also includes the Brut Réserve.
