Champagne Pierre Leboeuf is a family business based in Aÿ-Champagne, founded in the 15th century and currently run by the fifth generation of vignerons, including Vincent and Hélène Leboeuf. The historic house dates from the 15th century and the vineyards lie on UNESCO World Heritage sites.
- Vineyards: The estate manages vineyards in prestigious areas such as Aÿ (Grand Cru) and Avenay-Val-d’Or, with a focus on Pinot Noir and Chardonnay.
- Approach: As a récoltant-manipulant, the house controls the entire production chain. They combine traditional techniques (such as the use of an old press) with modern, environmentally conscious farming (Agriculture Raisonnée).
- Champagnes: The range includes the Brut 1er Cru (24 months of ageing), Brut Grand Cru (36 months of ageing), and special cuvées such as Bœuf Noir (Blanc de Noir in oak barrels) and Le Clos d’Hortense (single-plot).
- Experience: Visitors can visit the vaulted cellars and the estate with demonstrations and tastings, with the family members giving personal explanations of the process.
