Pierre Gimonnet & Fils is a family champagne house based in Cuis (Côte des Blancs), where the family has lived in the village since 1750 and has produced its own champagnes since 1935. The current management is in the hands of brothers Olivier and Didier Gimonnet, who represent the third and fourth generation respectively.
History and Vineyards
- Foundation: Pierre Gimonnet started in the 1930s vinifying and selling his own harvest, a style that his son Michel Gimonnet further developed and refined in 1955.
- Surface area: The estate has 29 hectares of vineyards, located exclusively in the Côte des Blancs.
- Classification: Of these, 13 hectares are classified Grand Cru (mainly Cramant, Chouilly, Oger) and 16 hectares Premier Cru (Cuis, Vertus).
- Grape varieties: The vineyard is 99% planted with Chardonnay, which is rare for a house that vinifies itself; only for the rosé is a small percentage of Pinot Noir used. The average age of the vines is high (often above 30-40 years).
Approach
- Plot vinification: Each vineyard plot is harvested and vinified separately to preserve the specific terroir characteristics, resulting in more than 40 separate "vins clairs".
- Traditional pressing: The grapes are pressed gently in traditional vertical presses, after which the must is cooled.
- Fermentation and ageing: Malolactic fermentation is always allowed for complexity. The champagnes age at least 18-24 months (non-vintage) and 4-6 years (millésime) in the bottle in cellars at constant temperature.
- Dosage: The house style is characterised by low dosages (often Extra Brut or Brut Nature), which emphasises the freshness and minerality of the Chardonnay.

- Special Club: An exclusive line of mono-terroir cuvées, including the highly rated Special Club Cramant Grand Cru and Special Club Chouilly Grand Cru, which often achieve scores of 91-95/100.
- Signature Cuvées: The core range includes the Cuis 1er Cru Brut (the emblematic house champagne), Gastronome and Fleuron.
- Oenophile: A highly rated (up to 95/100) Brut Nature (without dosage) from old vines in Cramant, which ages six years.
- Style: The champagnes are praised for their elegance, freshness and purity, with the house being a specialist in high-quality blanc de blancs.
