Paul Gadiot is a young champagne label of the Ponson family from Coulommes-la-Montagne, in the Petite Montagne de Reims.
- History: The label was set up by Camille Ponson after his oenology studies; his older brother runs the original Ponson family estate. Gault&Millau lists the wine under the Pascal Ponson estate.
- Vineyards and terroir: According to Gault&Millau, the family estate farms 13 hectares spread over five communes in the Petite Montagne de Reims. The grapes for Paul Gadiot come from premier cru vineyards.
- Winemaking and style: The vineyard was converted to organic and then biodynamic farming. Fermentation uses native yeasts, without fining or filtration and with minimal intervention.
- Cuvées: The flagship is Précurseur Premier Cru, a vintage champagne of around 50% Chardonnay and 25% each of Pinot Noir and Pinot Meunier, aged for a long time on the lees.
