Champagne Mignon-Boulard is a family business in Venteuil (Marne Valley), founded in 1911 by Louis and Louise Mignon, and now run by the fourth generation, Cyril and Estelle Mignon. The vineyards extend over 6.5 hectares with clay and limestone soils, dominated by Pinot Meunier complemented by Pinot Noir, Chardonnay and the rare Petit Meslier.

The approach combines traditional methods with sustainable practices; grapes are pressed in a traditional press (since the 1950s) and the wine is made without cold stabilisation or filtration, respecting the environment through organic manure and mechanical weeding. The champagnes are designed as culinary partners with specific cooking suggestions, such as the Sur le Bout des Doigts for aperitifs, the 1911 Sous Les Pavés (Blanc de Meunier) for poultry and cheeses, and the Matière Noire Rosé de Saignée for red meat.
