The champagne house M. Marcoult is based in Barbonne-Fayel in the Côte de Sézanne and is run by Florence and Julien Marcoult, who continue the traditional family foundation from 1967 by their grandfather Michel. The vineyards cover approximately 12 hectares and make use of chalky chardonnay soil for finesse and flint stones for the power of the Pinot noir.
The working method is strongly eco-responsible, with the use of eco-pastoral grazing, mechanical weed control via interceps and indigenous fermentation. Each plot is vinified separately and aged in various materials such as stainless steel, local oak barrels, foudres and wineglobles to maximise the expression of the terroir.
The range includes various cuvées such as the solitaire Hestia (extra-brut), the village cuvée B. de Barbonne (100% Chardonnay) and the parcel selections Macrêts (Blanc de Blancs), Bonnots (Rosé de Saignée) and Carabins (Blanc de Noirs). In addition, the house produces ratafia de Champagne in amber and rosé versions, and offers visits and tastings for guests.
