Champagne Hervé Dubois is a family estate in Avize, a Grand Cru village on the Côte des Blancs.
- History: In 1920 Hervé Dubois's grandfather bought land around Avize, originally to grow fodder; it later became a wine-growing business. His grandson Hervé launched the estate's own Champagne label in 1981. Since 2020 Nina has also been working on the estate, representing the fourth generation.
- Vineyards and terroir: Most of the vineyard lies on the Côte des Blancs, with Chardonnay in Grand Cru sites.
- Methods and style: The Chardonnay does not undergo malolactic fermentation, in order to preserve the freshness of the fruit and its balance during bottle ageing.
- Cuvées: The range includes a Brut Tradition, a Réserve Blanc de Blancs Grand Cru, a Brut Rosé Grand Cru and vintage Blanc de Blancs Grand Cru wines made from Avize fruit.
