Champagne Hervé Brisson is a family business based in Vert-Toulon (Marne), founded by the grandfather of the current owner, with the first harvest on the estate in 2001. The estate comprises 3.35 hectares of vineyards in the Petit Morin valley, of which 3.05 hectares are planted with Chardonnay and 0.30 hectares with Meunier, on chalky soil.
Winegrowing has been certified organic (AB) since 2016, with the first certified harvest in 2019. The approach emphasises biodynamic methods and respect for nature, including the planting of soil-improving crops and hedges. In the cellar the estate works with a 2000 kg press, barrels for vinification, heavy settling and minimal or no filtration and fining, in order to preserve the pure aromas of the grapes.
The estate produces three champagnes, all based on Chardonnay:
- Les Aulnes: A refined blend of selected plots and reserve wines, designed as a return to the essence.
- Les Régales: A single-plot cuvée from a plot of 0.44 hectares, planted in 1982 on a very shallow chalk soil.
- Le Long du Chemin: A single-plot cuvée from a plot of 0.23 hectares, planted in 1990, focused on the sun orientation and aromatic expression.
Annual production is about 14,000 bottles of organic champagne. The address is 16 Rue du Général de Gaulle, 51130 Vert-Toulon.
