Champagne Hautbois is a fifth-generation family business based in Pévy (Massif de Saint-Thierry), founded by Jean-Pol Hautbois in 1976 and currently run by Sandrine and Fabien. The vineyards cover 6 to 8 hectares and include the five Champagne grape varieties: Meunier, Pinot Noir, Chardonnay, Arbane and Petit Meslier.
The approach is geared towards sustainable viticulture with HVE certification, with permanent ground cover, mechanical weed control and green harvesting to maximise quality. The champagnes are characterised by low yields, hand harvesting and special ageing in oak barrels and foudres.
The cuvées include various blends and single varietals, such as:
- Haut'thentic: Blend of 75% Meunier, 15% Chardonnay and 10% Pinot Noir.
- Haut'rigine: 100% Pinot Noir (Blanc de Noirs), vintage (e.g. 2016), extra brut.
- Haut'Dacieuse: Blend of all five grape varieties, from old vines.
- La Porte Goliva and Les Leury: Single-plot cuvées with a high addition of reserve wines from solera systems.
- Haut'Vni and Haut'bsession: Pinot Noir-dominant cuvées, aged in oak and acacia.
