History:‌ The family has farmed vineyards in the Marne valley for five generations. In 1951 Marthe and René Remi began producing champagne under the name "René Remi et fils", after which Guy Remi officially founded the house in 1962. Today the business is run by Nathalie Remi and Jérémy Cheval, who have expanded and modernised it.

Vineyards: The estate covers 4.05 hectares of vines in the Champagne appellation, located in Baslieux-sous-Chatillon (3.15 ha) and the communes of Cerseuil and Troissy (0.90 ha). The vineyard is planted with the three main varieties: Pinot Meunier (2.85 ha), Pinot Noir (0.90 ha) and Chardonnay (0.30 ha). The average age of the vines is around 30 years, with some up to 90 years old.

Winemaking: Guy Remi follows a sustainable and organic approach (HVE and VDC certified, in conversion to biodynamics since 2021). Chemical herbicides have been replaced by natural ground cover and mechanical weeding, and sexual confusion is used against insects. The harvest is exclusively by hand, and the grapes are pressed in traditional wooden and modern Coquard presses. Vinification takes place in temperature-controlled stainless steel vats and oak barrels, with Jérémy Cheval also working with a Solera system for red wine and wine following the lunar cycle.

Champagnes: The house produces various cuvées, including the Cuvée Brut Réserve (an even mix of 33% Meunier, Pinot Noir and Chardonnay, 3+ years on the lees) and the Cuvée Demi-Sec Tradition (80% Meunier, 20% Pinot Noir, 35 g/l dosage). The champagnes are characterised by a focus on terroir, minerality and fruitiness, with a production of around 30,000 bottles per year.
