Gaston Collard is a traditional, family-run champagne house in Bouzy (Grand Cru Côte des Noirs), founded in 1937 and currently run by the third generation, Cyril and Amandine Collard. The estate produces between 12,000 and 16,000 bottles a year on an area of about 2 hectares divided over 11 plots, with the grapes largely consisting of Pinot Noir with 10% Chardonnay.
Since 2012 the method has been geared towards biodynamic and organic farming, with official Ecocert and Demeter certifications since 2016. The business stopped using pesticides and weedkillers as early as 2009, and uses only natural fertilisers, indigenous yeasts and organic products to practise respectful and sustainable farming.
The range comprises two main lines: the "Tradition" (faithful to the family history) and the "Exception" (expression of Cyril's vision). Well-known cuvées are the Blanc de Noirs (Extra Brut, 3 g/l, 20-24 months of ageing, aroma profile of pear and hazelnut) and the Cuvée Lucie (5 g/l, with oak notes from reserve wines). In addition, the house also offers Coteaux Champenois (still wines) and Ratafia. Visitors can book in advance for tastings, "Grape picker for a day" or "Winegrower for a day" activities.
