Champagne Daniel Dumont is a wine-growing estate in Rilly-la-Montagne, in the Montagne de Reims. Every stage, from pressing to sale, takes place exclusively on the estate, using grapes from its own production.
Vineyards The estate covers 10.5 hectares in Villers-Allerand, Rilly-la-Montagne, Chigny-les-Roses and Ludes (Montagne de Reims), Sézanne and Vindey (Côte de Sézanne) and Barzy-sur-Marne (Vallée de la Marne). Plantings are 40% Chardonnay, 34% Pinot Noir and 27% Pinot Meunier; 72% of the vineyard is premier cru. Viticulture is reasoned, with grassing, mechanical weeding and soil work. Since March 2019 the entire estate has been HVE certified.
Approach The harvest is sorted plot by plot and pressed at low pressure in the estate's own pressing centre. Alcoholic and malolactic fermentation take place in temperature-controlled stainless-steel tanks. The bottles age for several years sur lattes in vaulted chalk cellars at around 10°C.
