Champagne Cose is a young project from Chouilly, set up by Gil and Victor. Rather than owning vineyards, Cose works with established growers, and each cuvée bears the name of the partner and the year of the base harvest.
- Approach and style: The cuvées are made per partner and per harvest and are generally low- or zero-dosage, with a strong focus on origin and natural winemaking.
- Cuvées: The first cuvée was made with Domaine de Bichery: a 100% Pinot Noir from Gyé-sur-Seine from the 2022 harvest, fermented with indigenous yeasts and without added sulphur. Other cuvées include those with Antoine Bouvet, with Flavien Nowack (Vallée de la Marne) and with Thomas Perseval of Perseval-Farge in Chamery, such as a brut nature of Pinot Noir from the premier cru La Pucelle.
