History: The Cossy family business has had winegrowers in the Montagne de Reims since 1764. Although the ancestors were already growing grapes, Sophie Cossy's grandparents began producing champagne themselves in the 1950s. After the death of Francis Cossy in December 2017, his daughter Sophie, at only 26 years of age, took over the business and now runs it as the third generation.
Vineyards: The estate manages approximately 7 hectares of vineyards, divided over 34 plots in Pargny-lès-Reims, a village with Premier Cru status. The grape varieties are Pinot Meunier (53%), Pinot Noir (32%) and Chardonnay (15%). The soil of the Montagne de Reims provides good drainage and sun exposure, essential for the quality of the champagnes.
Approach: Sophie Cossy combines traditional methods with a modern, environmentally friendly approach. The business is certified Haute Valeur Environnementale and practises sustainable viticulture without pesticides. Important changes after the takeover include a longer ageing in the cellar, the return to traditional corks, and a strong reduction of sugar in the wines, resulting in drier, more elegant champagnes.
Champagnes: The portfolio includes various cuvées that reflect Sophie's feminine touch and modernity:
- Cuvée Élégance Brut Rosé: The most popular champagne, with lush red fruit and a hint of citrus.
- L'Éphémère Premier Cru: A brut champagne in a decorated green bottle.
- Vieilles Vignes: A special bottling from the oldest vines, characterised by excellent balance; this cuvée is available in limited quantities.
- Origine: An Extra-Brut that completes the portfolio with an extra-dry standard.
- L'Instant: A 100% Chardonnay aged in large barrels.
