Champagne Clandestin is a small négociant project in the Côte des Bar, set up by Benoît Doussot and based in Buxières-sur-Arce.
- History: Doussot comes from Nuits-Saint-Georges in Burgundy, trained in Beaune and worked for Jean-Philippe Fichet in Meursault. He started the project in 2015 with Bertrand Gautherot of Vouette & Sorbée as his mentor; the first cuvées were made in Gautherot's converted barn.
- Vineyards and terroir: Clandestin works with organically grown grapes from a group of growers in the south of Champagne: Pinot Noir on Kimmeridgian soils and Chardonnay on Portlandian soils.
- Winemaking and style: The wines ferment with indigenous yeasts in 600-litre oak barrels and are bottled with no dosage.
- Cuvées: Each year two Pinot Noirs are made, separated by exposure: Boréal comes entirely from north-facing parcels, Austral from south-facing ones. The house also makes Chardonnay-based cuvées.
