Champagne H. Billiot & Fils is a family business based in Ambonnay, a grand cru village in the Montagne de Reims. The history goes back to 1896, when Eugène Billiot invested in the vineyards as a miller; the first champagnes under the Billiot name date from 1937, and the house was formally reopened as a trading business in 1960 by Henri Billiot. Today the operation is run by Laetitia Billiot, the fifth generation of the family.
The vines cover 4.70 hectares divided over 18 plots, all located in Ambonnay with an ideal southern exposure. The vineyards consist of 75% Pinot Noir and 25% Chardonnay. Work on the plots follows the principles of integrated (raisonnée) farming, with respect for the environment and traditional methods.
Production of approximately 32,000 bottles per year takes place entirely in-house, from vineyard to dispatch. Winemaking is characterised by traditional techniques, deliberately dispensing with malolactic fermentation and filtration to preserve the pure expression of the grand cru terroir.
The offering includes various grand cru cuvées, including:
- Cuvée Tradition: An aromatic blend of 75% Pinot Noir and 25% Chardonnay, with a golden colour that reflects the power of the Pinot Noir.
- Cuvée Réserve: A brut champagne with a lower acidity and more complexity thanks to longer ageing.
- Cuvée Millésimé: Vintage champagnes that capture the specific characteristics of a year, often with a higher proportion of Pinot Noir.
- Cuvée Laetitia: The house's prestige cuvée, available as non-dosé, which emphasises the pure power of the terroir.
- Cuvée Julie: A unique blend of 50% Pinot Noir and 50% Chardonnay, characterised by a low dosage.
