Champagne Aurore & Florian Laval is the family estate in Boursault, in the Vallée de la Marne, previously known as Champagne Michel Laval. Siblings Aurore and Florian Laval have run it since 2019 as the fifth generation.
- History: The family has been making wine since 1870. Michel Laval founded the present estate in 1979; in 2019 his children Aurore and Florian took over.
- Vineyards and terroir: The vineyard is planted with 70% Meunier, 28% Pinot Noir and 2% Chardonnay and is farmed without herbicides or insecticides.
- Cuvées: Ut Prius is a 100% Meunier aged for more than five years on its lees, a tribute to Roger Laval, a great champion of Meunier. Symposium is a blanc de noirs, and Olim a Meunier rosé partly vinified in oak barrels. The range also includes La Pâture and Les Fontaines des Fées, among others.
