Champagne Aubry is an independent champagne house in Jouy-lès-Reims, founded in 1986 by the brothers Pierre and Philippe Aubry, who descend from a winegrowing family dating back to 1790. Pierre is an oenologist and Philippe a biologist; together they form a unique team that combines classic traditions with innovation.
- History: The brothers started in 1986 with a mission to rescue forgotten historical grape varieties. In 1989-1990 they grafted the first forgotten varieties, with the first harvest of Arbane and Petit Meslier in 1993, followed by Fromenteau and Pinot Gris in 1994. Their aim was to recreate the champagne profile of the 18th century, as illustrated by their prestige cuvée Le Nombre d’Or.
- Vineyards: The estate covers 12 hectares spread over almost 50 plots in the Petite Montagne de Reims. This diversity of soil and exposure offers a unique expression of terroir. The vineyards contain both the classic varieties (Chardonnay, Pinot Noir, Meunier) and the rare historical varieties (Arbane, Petit Meslier, Fromenteau, Pinot Gris).
- Approach: The philosophy revolves around rigour and originality. They use a traditional press with a large trough, select only the heart of the cuvée, and sometimes age wine in wooden barrels. A unique feature is the use of a solera system (known from sherry) for some reserve wines, which gives a complex, unique character. Bottle ageing is at least 18 months, but rises to 4 years for prestige cuvées such as Le Nombre d’Or, Aubry de Humbert and Ivoire et Ébène.
- Champagnes: The collection includes various cuvées, including the iconic Le Nombre d’Or (a blend of seven historical grape varieties) and historical interpretations such as La cuvée Ivoire et Ebène (1982, Chardonnay and Meunier vinified separately and blended) and Le Sablé rosé (1986, a lightly sparkling rosé in 18th-century style without dosage).
