Champagne Aspasie is an artisanal champagne house in Brouillet (Ardre Valley, west of Reims), run by Paul-Vincent Ariston, who has continued the family harvest since 2011. The origins of the house go back to 1794, with five generations of experience safeguarding the tradition of the vine. The estate is recognised as a Récoltant-Manipulant (a producer who uses only its own grapes).
Vineyards and Terroir The house manages 12 hectares of vineyards, largely consisting of old vines of around 30 years. In addition to the standard varieties (Chardonnay, Pinot Noir, Pinot Meunier), Aspasie cultivates four rare historical varieties: Arbanne, Petit Meslier, Pinot Blanc and Pinot Gris. The soils in the Ardre valley are diverse, with tuffeau, clay, sand and limestone, which contributes to the minerality and freshness of the wines. Since 2022 the estate has been fully certified organic (after starting conversion in 2019) and holds the HVE and VDC labels.
Approach The grapes are pressed on a traditional Coquard press. Vinification takes place in enamelled steel and stainless steel tanks, with the use of wooden barrels for certain cuvées (such as the Brut de Fût) to give aromatic depth. Blending is an annual ritual in which base wines and reserve wines (sometimes kept in bottle for years) are combined. Production is approximately 30,000 bottles per year; 100% of the vineyards are organic, although the share of organic bottles sold is still around 30%.
Champagnes and Cuvées The range emphasises terroir and rare grapes:
- Cépages d’Antan: A Blanc de Blancs made from the rare varieties Arbanne, Petit Meslier and Pinot Blanc; a timeless cuvée that expresses a passion for the past and the future of the vine.
- Brut de Fût: A gastronomic champagne from the oldest vineyards, aged in wooden barrels, with aromas of red fruit, gingerbread and toast.
- Brut Prestige Vieilles Vignes: An expressive and balanced brut with a nose of citrus and small red fruits.
- Blanc de Blancs: A discreet, mineral champagne with 40% Chardonnay, known for its freshness and length.
- Rosé de Noirs: A rosé with a deep colour, made from Pinot Noir and Pinot Meunier, with aromas of wild berries and spices.
