Champagne Antoine Bouvet is a small family estate in Mareuil-sur-Aÿ, in the Vallée de la Marne close to Épernay.
- History: The estate was founded by Antoine's grandfather, Guy Bouvet. Antoine began working there in 2011.
- Vineyards and terroir: According to Gault&Millau the estate covers about 5 hectares, spread across three premier cru villages: Mareuil-sur-Aÿ, Bisseuil and Avenay-Val-d'Or.
- Approach and style: Antoine opted for a minimal-intervention approach and gave up weedkillers; trials with organic and biodynamic farming followed from 2015. Around half of the vineyard is farmed biodynamically. In the cellar, fermentation starts spontaneously with as little intervention as possible, and the wines are partly aged in barrel.
- Cuvées: The Saignée de Bisseuil is a rosé de saignée from a single plot of Pinot Noir in Bisseuil. Les Monts de la Vallée Rosé is a blend of Pinot Noir and Chardonnay from Mareuil-sur-Aÿ and Bisseuil.
