Champagne Ullens is the label of Domaine de Marzilly, an independent family estate in the Massif de Saint-Thierry near Hermonville, north-west of Reims.
- History: The estate was founded in 2012 by the Belgian Maxime Ullens, who had trained as an architect. He discovered the ruins of the 12th-century Château de Marzilly, surrounded by 32 hectares of parkland and forest. In that forest, ungrafted vines were found that had escaped phylloxera thanks to the sandy soil. Ullens trained at the viticulture school in Avize and built up the estate with his wife Anna. In 2020 the first cuvée appeared under the Champagne Ullens brand.
- Vineyards and terroir: The estate covers about four hectares, with a focus on Meunier on the sandy soils of Hermonville. Nearby vineyards are also rented.
- Approach and style: Each champagne is built around the plots it comes from. According to Gault&Millau, the estate is organic and HVE3-certified.
- Cuvées: Alongside the Extra Brut cuvées released by 'LOT', there is LPM, a Pinot Meunier sourced largely from the Marzilly lieu-dit, and a Coteaux Champenois.
