Champagne Ulysse Collin is a récoltant-manipulant in Congy, in the Coteaux du Petit Morin, run by Olivier Collin.
- History: The Collin family has grown vines in the Coteaux du Petit Morin since 1812. In 1987 Olivier's father leased the vineyards to a large Champagne house. Olivier, who trained with Anselme Selosse, recovered the family vineyards in 2003 and then began producing under his own name.
- Vineyards and terroir: Les Pierrières comes from a 1.2-hectare plot of old chardonnay vines on chalk mixed with black flint. Les Maillons, from pinot noir, comes from the Sézannais.
- Approach and style: Collin works without chemicals. The wines are fermented and aged in oak, the cuvée and taille are vinified separately, and dosage is very low.
- Cuvées: Les Pierrières, the house's first wine, is a blanc de blancs from two vintages aged around three years on the lees. Others include Les Maillons, Les Enfers and Les Roises.
