Champagne​‌​ Stéphane Herbert is a récoltant-manipulant located in Rilly-la-Montagne (Marne), a Premier Cru village in the Montagne de Reims.

• History: The estate is fourth generation and was founded in 1996 by Stéphane and his wife Virginie, later joined by their son Hugo. Stéphane launched his own brand in 2000.
• Vineyards: The operation covers 4.5 hectares spread over Rilly-la-Montagne and Nogent-l'Abbesse. The grape varieties are Chardonnay (50%), Pinot Noir (40%) and Pinot Meunier (10%). The estate has been certified Organic since June 2023 (previously HVE since 2019).
• Working methods: The champagnes are characterised by vinification and ageing in oak barrels (often 10 months), sometimes combined with fermentation in concrete or clay eggs for complexity. Production is approximately 30,000 to 35,000 bottles per year, with low dosages (average 6 g/l).
• Champagnes: The core range includes:
• Brut Tradition: Blend of three varieties, partly in barrel.
• Réserve Véronèse: 50% Chardonnay / 50% Pinot Noir, aged in barrel.
• Blanc de Blancs Excellence: 100% Chardonnay, aged in old demi-muids.
• Blanc de Noirs Extra-Brut Millésime: 100% Pinot Noir (sometimes with Meunier), vintage.
• Rosé de Saignée: Intense rosé from the bleeding (saignée) method.
