History: The house was founded in 1892 by Octave Mignon and received its real impetus under Pierre Mignon, who took over the estate in 1970 together with his wife Yveline. Today the business is run by the fifth generation: Pierre and Yveline, together with their children Céline (sales) and Jean-Charles (vineyards and vinification).
Vineyards: The 20 hectares of own vineyards lie in the Vallée de la Marne, Côte des Blancs and around Épernay, with a soil of chalk and clay. The grape varieties are divided into approximately 50-60% Pinot Meunier, 30-40% Chardonnay and 10% Pinot Noir. The estate is certified Haute Valeur Environnementale (HVE) Level 3 and harvests by hand.
Approach: The champagnes are characterised by a balance between tradition and innovation, with long ageing on the lees (from 3 to 11 years) and various dosages, including Brut Nature (0 g/l) and low dosages (6-7 g/l). The vinification includes wood vinification for specific cuvées and use of the saignée method for rosé.
Champagnes:
- Grande Réserve Brut: 80% Pinot Meunier, the house's calling card.
- Brut Prestige: Blend of Pinot Meunier, Chardonnay and Pinot Noir.
- Cuvée Pure: Brut Nature (0 g/l), 55% Meunier, 35% Chardonnay, 10% Pinot Noir.
- Blanc de Blancs Grand Cru: 100% Chardonnay from Grand Cru villages (Chouilly, Cramant, Avize).
- Clos des Graviers: A prestigious cuvée with 11 years of ageing on the lees.
- Année de Madame: A vintage cuvée, often a gold-medal winner.
