Champagne Pierre Gerbais is a family estate in Celles-sur-Ource, in the Côte des Bar (Aube), run by Aurélien Gerbais and his wife Audrey.
- Vineyards and terroir: The estate farms around 15 to 18 hectares (sources differ), planted with Pinot Noir, Chardonnay and also Pinot Blanc.
- Approach and style: Aurélien Gerbais has steered the estate towards biodynamic viticulture and single-plot cuvées. For Les Grandes Côtes no sulphur is added during vinification and ageing; it is only added at bottling.
- Cuvées: Les Grandes Côtes is a 100% Pinot Noir extra brut from a single plot, based on a 'réserve perpétuelle' (solera) going back to 2011. The wine spends 36 months on its lees and receives a dosage of 3 g/l. Gault&Millau describes aromas of blackcurrant, mandarin, pineapple and strawberry. The house also makes cuvées including Grains de Celles and Grains de Celles Rosé.
