Champagne Pélissot Père et Fils is a family business and vigneron indépendant based in Les Riceys (Aube), a village in the heart of the Champagne region. The house combines tradition with modernity and produces champagnes under the AOC Champagne and AOP Rosé des Riceys labels.

History and Family The Pélissot family has been established in Les Riceys since 1730. It is a third-generation family business, run by Jean-Paul, Monique and Nicolas Pélissot. Nicolas Pélissot joined his parents in 2003 and the estate has been a member of the federation of Vignerons Indépendants de Champagne since 2013.

Vineyards and Terroir The estate has 6 hectares of vineyards in Les Riceys, an area known for its exceptional terroir. The grape varieties are characterised by their suitability for the cool climate of the Aube, in particular Pinot Noir and Chardonnay.

Approach and Champagnes Pélissot is a propriétaire-récoltant (owner-grower), which means they grow and process their own grapes. The champagnes are known for their aromatic richness and character. Some notable cuvées are:

Brut Prestige: A blend of 80% Chardonnay (half of which is reserve wine) and 20% Pinot Noir. It has flavours of dried lemon and floral notes, and is fine and mineral.
Cuvée Sainte Marie: Also 80% Chardonnay (vinified in oak barrels) and 20% Pinot Noir. This is a powerful and fine champagne with aromas of white fruit and a roasted touch.
Brut Tradition: Consisting of 80% Pinot Noir (half reserve wine) and 20% Chardonnay. This fresh champagne has notes of citrus fruit, peaches and lightly stewed fruit.
