Champagne Olivier Lassaigne is a fourth-generation family business based in Montgueux, 10 km from Troyes, where Chardonnay is the dominant grape. The estate practises reasoned viticulture (viticulture raisonnée) to respect nature and wildlife, with a focus on artisanal production.
History and Operation
The house is run by Stéphanie, Olivier and Florian Lassaigne. Florian also continues the production of Pays d'Othe cider and apple juice through "La Ferme des Charmes". Visitors can, by appointment, be given a tour of the modern cellar, where the secrets of production are explained.
Champagnes and Cuvées
The range includes various styles, with many champagnes being Brut:
- Blanc de Blancs: Fresh and delicate, made from 100% Chardonnay.
- Tradition: A blend of 50% Chardonnay and 50% Pinot Noir, aged 2-3 years.
- Réserve: A powerful Blanc de Blancs of 100% Chardonnay, aged 8 years in the cellar.
- Cuvée Bois: A round and subtle Blanc de Blancs fermented on acacia wood.
- Prestige: An exclusive cuvée (e.g. vintages such as 2015/2019).
- Rosé: Obtained by saignée, aromatic and colourful.
