History: The Collard family have been winegrowers in Bouzy since the 17th century. In 1919 the family settled permanently in Bouzy through the marriage of Lucien Collard and Julia Bara. The current estate was officially founded in 2004, with the first commercial cuvées reaching the market in 2015. Since 2023 the estate has been certified organic.
Vineyards: The estate has 2 hectares of vineyards, divided over Bouzy (Grand Cru) and Loches-sur-Ource (Côte des Bars, Aube). The soils in Bouzy are ideal for Pinot Noir, the dominant grape in the house's blends.
Winemaking: The team, consisting of Lucien Collard and his niece Auriane Denis, applies strict quality standards. Characteristics include:
- Organic cultivation and limited use of sulphites.
- Exclusive use of the cœur de cuvée (first pressing).
- No malolactic fermentation to preserve freshness.
- Long ageing on the yeast (3-5 years) and low dosage (often under 6 g/L).
Champagnes: The production focuses on elegant, Pinot Noir-driven champagnes with high critical acclaim (up to 94/100):
- Millésime: 80% Pinot Noir, 20% Chardonnay; ageing of at least 5 years.
- Extra Brut: 70% Pinot Noir, 30% Chardonnay; dosage 5 g/L.
- Brut Nature: 70% Pinot Noir, 30% Chardonnay; zero dosage.
- Rosé and Blanc de Noirs (limited runs).
