History Jérôme Prévost founded Champagne La Closerie in 1998, although he had already inherited the vineyards from his grandmother in 1987. Originally he sold his grapes to négociants, but under the influence of his friend Anselme Selosse he began making champagne himself in 1998 in the latter's cellar in Avize. Since 2003 vinification has taken place in his own cellar, designed by himself, in Gueux, and in 2018 he moved to a modern, ecological cellar directly next to the vineyard.
Vineyards and Terroir The core is the 2-hectare plot Les Béguines, planted with 100% Pinot Meunier (massal selection) that was planted in the 1960s. The soil is unique for the region: a 45-million-year-old seabed consisting of sand and limestone (fossils), without the typical deep chalk layer of Champagne. Prévost works biodynamically and organically, without herbicides or pesticides, focusing on physiological ripeness and mycorrhization.
Winemaking Prévost follows a "lazy vinification" without machine input or electricity in the cellar.
- Fermentation: Exclusively in oak barrels (225-600 litres) with wild yeasts.
- Fining/Filtration: No fining, filtration or cold stabilisation.
- Dosage: Extremely low, often extra-brut with 2 to 3 g/l sugar, or even no dosage at second disgorgement.
- Disgorgement: Possible early (about 16 months after bottling) to avoid yeast flavours.
- Blending: No blending of different vineyards or vintages; every bottle is a single vintage (indicated by an LC code).
Champagnes The house produces three main lines with worldwide cult status and limited availability (approx. 3,000-6,000 bottles/year): 1. La Closerie Les Béguines: The flagship, 100% Pinot Meunier from Gueux, known for its complex, mineral and "vinous" character. 2. Fac-Simile: A rare Extra-Brut Rosé, made from still red Pinot Meunier from the same vineyard. 3. Grand Cru / Experimental: Recently also releases of Chardonnay (e.g. Grand Cru) and other experimental cuvées, in which grapes are sometimes bought in from elsewhere for specific projects.
