Champagne Hervieux-Dumez is a family business in Sacy (Premier Cru, Montagne de Reims), founded in the 1940s by Henri Hervieux and Juliette Dumez. Day-to-day management is in the hands of the fourth generation: Laurent, Clément and Timothée Hervieux. The estate has been a member of the Club Trésors de Champagne since 1971 and produces about 50,000 bottles per year.
History and Terroir
The heritage of four generations is characterised by healthy and sustainable viticulture. Since 2020 there have been beehives on the plots, which earned the estate the first "Bee Friendly" certification in Champagne. The terroir covers 9.5 hectares spread over 50 plots in Sacy, Écueil and Chamery, with soils of clay-limestone, loam and sand. The grape varieties are 60% Pinot Noir, 24% Chardonnay and 16% Meunier.
Winemaking and Champagnes
As a Récoltant-Manipulant (grower-producer), all champagnes are made exclusively on the estate using the traditional method. The style is characterised by balance, finesse and freshness.
- Hervieux-Dumez Réserve: A blend of 25% Pinot Meunier, 25% Pinot Noir and 50% Chardonnay, with 30% reserve wines and a dosage of 9 g/l.
- Brut Tradition 1er Cru Sacy: A classic blend (25% Chardonnay, 50% Pinot Noir, 25% Meunier) with aromas of citrus, flowers and biscuit.
- The range also includes Blanc de Noirs, cépages uniques (single grape varieties) and cuvées aged in oak barrels (foudres).
