Champagne Guy de Chassey is a Récoltant-Manipulant (RM) that has been in the family for seven generations, currently led by Marie Odile de Chassey and her daughter Ingrid. The estate is based in Louvois (Grand Cru) in the Montagne de Reims, with vineyards also in Bouzy (Grand Cru) and Tauxières-Mutry (Premier Cru).
History
The origins of the house go back to the 12th century, but the family only began bottling wine itself in the 3rd generation (around 1850), under the name Lucien Beaufort. The current name Guy de Chassey was adopted in a later generation. The transition to female leadership (Marie Odile and Ingrid) marks two generations of female continuity.
Vineyards and Terroir
The estate manages 9.5 hectares of vineyard on argilo-calcaire soil with south and south-east exposure. The grape varieties are 75% Pinot Noir and 25% Chardonnay (no Meunier). The vineyards are HVE-certified (Haute Valeur Environnementale) and the viticulture is raisonnée, with biodiversity encouraged through grass cover and ploughing.
Winemaking
Guy de Chassey follows a philosophy of precision, freshness and fruitiness.
- Vinification: Use of thermostatic stainless steel tanks at 18°C.
- Malolactic fermentation: Deliberately blocked to preserve natural freshness and acidity.
- Ageing: On laths, in bottles, tanks and oak barrels (for specific cuvées such as Antide).
- Harvest and pressing: Hand harvesting and use of a traditional wooden press for gentle extraction.
- Remuage: Entirely by hand (manual riddling).
- Dosage: Varies between 6.5 and 9 g/l depending on the cuvée.

- Brut Cuvée de Buretel: 70% Pinot Noir, 30% Chardonnay, 36 months on the lees, 9 g/l dosage.
- Brut Millésime 2015: 60% Pinot Noir, 40% Chardonnay, 5 years of bottle ageing, 8 g/l dosage.
- Brut Cuvée Réservée Nicolas d'Olivet 2020: Grand Cru, 60% Pinot Noir, 40% Chardonnay, gold medal at the Mondial de Bruxelles 2023.
- Cuvée Euphrasie: 85% Chardonnay, 15% Pinot Noir, 10 years on the lees, 6.5 g/l dosage.
- Brut Cuvée Antide: Made from old vines, 50/50 Pinot Noir/Chardonnay, aged in oak barrels.
- Blanc de Noirs Extra Brut: 100% Pinot Noir, 8 g/l dosage.
