History: The estate was founded in 1947 by René Savart. His son Daniel took over the leadership in the 1970s, after which Frédéric Savart took over full management in 2005. Frédéric, who originally wanted to become a footballer, decided to return to the family business in Écueil to vinify the wine production entirely himself, a step he definitively completed in 2012-2013 by leaving the cooperative.
Vineyards: The estate covers about 4 hectares in the Montagne de Reims, with most of the vineyards in the Premier Cru village of Écueil and a few hectares in Villers-aux-Nœuds. The soil is diverse, consisting of sand, clay and chalk, which contributes to the complexity of the wines. The vineyard area is dominated by Pinot Noir (about 3.5 hectares), supplemented by about 0.5 hectare of Chardonnay.
Method: Frédéric Savart takes an organic approach with great attention to biodiversity, hand harvesting and preventive disease control rather than curative treatments. In the cellar they vinify plot by plot, often in new oak barrels from the forests of Écueil or in stainless steel cuves, to preserve the expression of terroir. The winemaker aims for low dosages and often avoids malolactic fermentation to preserve the natural freshness and acidity of the Pinot Noir.
Champagnes: Production comprises about 40,000 bottles a year and is characterised by finesse, energy and a clear expression of terroir. Well-known cuvées are:
- L'Ouverture: An accessible entry of Pinot Noir.
- Les Noues and Le Mont Benoît: Plot-specific Champagnes that highlight specific soil types.
- Le Mont des Chrétiens: A prestigious Blanc de Blancs of Chardonnay.
- La Dame de Cœur: An iconic prestige cuvée.
- Bulle de Rosé: A rare rosé Champagne.
