François Chaumont is an independent champagne house based in Œuilly, which produces exclusively Grand Cru champagnes from Puisieulx, the smallest Grand Cru area of Champagne.
History
François Chaumont took over the 5-hectare family vineyard in 1994 as the first generation of winegrower. Until 2008 he delivered grapes to the cooperative, but through his marriage to Marie-Hélène Littière (daughter of Champagne Michel Littière) he gained access to their cellars in Œuilly. Since then he has vinified part of his harvest himself, benefiting from the expertise of his in-laws in a modern environment.
Vineyards
The vineyards lie scattered on south-eastern slopes of Puisieulx and cover 5 hectares. The soil is light, well-draining and very chalky, consisting of chalk gravel (grêches). The estate has been certified HVE level 3 (Highest Environmental Level) since 2018 and uses integrated pest management. The grape varieties are strictly 1/3 Chardonnay and 2/3 Pinot Noir, without Meunier.
Method
Although the vineyards lie in the Montagne de Reims, the grapes are pressed, fermented and produced in Œuilly (Vallée de la Marne) at Champagne Michel Littière. This site offers modern facilities for pressing, tirage, riddling and disgorgement. The champagnes are characterised by pure aromas, minerality and low dosage (Extra Brut), and are often brought to market young to preserve their freshness.
Champagnes
The range consists exclusively of monocépage (single-variety) cuvées:
- Blanc de Blancs: 100% Chardonnay, known for its fine mineral structure; available as a millésime (e.g. 2017, 2019, 2021).
- Blanc de Noirs: 100% Pinot Noir, available as Brut and Extra Brut (dosage ≤ 6 g/l), with aromas of red fruit and structure.
- Rosé: 100% Pinot Noir, made by adding red wine from Puisieulx, with a raspberry-red colour and fruity taste.
All cuvées are Grand Cru and are sold in bottles and magnums (wooden case).
