History: The Rodez family has been growing grapes in Ambonnay for three centuries. Eric Rodez, the eighth generation, took over the leadership in 1982 after experience gained at, among others, Domaine Rapet in Burgundy and Krug. Since 2012 the estate has been certified organic (Demeter) and he holds the title of mayor of Ambonnay. The ninth generation, his son Mickael, is now involved in running the business.
Vineyards: The estate has 6 hectares of Grand Cru vineyards in Ambonnay, located on the "Côte des Grands Noirs". The soil consists of chalk with a thin layer of clay, ideal for Pinot Noir. The vineyards are planted 55% with Pinot Noir and 45% with Chardonnay. The average age of the vines is 35 years, with some plots older than 70 years. Intensive work is done on biodynamic and organic farming, in which chemical weed control and artificial fertiliser are forbidden.
Method: Eric Rodez calls himself an "'auteur de champagne'" and strives for authenticity by capturing the annual character in the glass. Each of the 35 plots is vinified separately, resulting in 60 different base wines for blending. About 80% of production ages in oak barrels (often using Burgundy oak), avoiding new wood. For many cuvées the malolactic fermentation is partly suppressed (up to 70%) to preserve freshness, while 5 to 7 different vintages (reserve) are often blended for complexity.
Champagnes: Notable cuvées include:
- Blanc de Noirs Grand Cru: A powerful yet elegant wine of Pinot Noir, with 70% on oak and 70% without malolactic fermentation for freshness.
- Cuvée des Crayères: A blend of 60% Pinot Noir and 40% Chardonnay, with 50% reserve of 4 to 5 years.
- Cuvée des Grands Vintages: Made from the best parts of top years, fully vinified in wood.
- Blanc de Blancs: Ages 70% in oak barrels, with 40% without malolactic fermentation.
- Spécial Club: An exclusive, vintage prestige cuvée.
