History: The champagne house has an unbroken winegrowing history in Écueil (Montagne de Reims) since 1658, with the first Champagne production in 1844. The house has been run exclusively by women for almost a century; Elodie Desbordes is the fifth generation of female leaders and took over the business in 1997 under the name Elodie D.
Vineyards: The vineyards cover 9.14 hectares spread over four communes, with the core in Écueil (Premier Cru). The grape composition is 63% Pinot Noir, 22% Chardonnay and 12% Pinot Meunier. The soil consists of limestone, sand and clay. Since the 2024 harvest the estate has been fully organically certified (previously VDC and HVE since 2017).
Method: Elodie Desbordes applies biodynamic and organic methods, including grazing by 40 sheep (since 2020) and traditional ploughing. Vinification is artisanal and diverse: she uses egg-shaped vats, oak barrels (sometimes from her own wood from Écueil) and makes rosé by maceration. Pressing is done plot by plot to preserve the expression of terroir.
Champagnes: The range consists exclusively of Premier Cru Champagnes from Écueil. The style varies from powerful and fruity to fine and delicate, with variations in dosage (e.g. Extra Brut with 6 g/L sugar) and grape varieties (including Pinot Gris). Well-known cuvées include Cuvée Caricature Fabrice and Cuvée Pierre.
