Champagne Doyard-Mahé is a family business in Vertus (Côte des Blancs), founded in 1927 by Maurice Doyard, who was a co-founder of the CIVC. The estate is currently run by Carole Doyard as chef de cave and récoltante-manipulante, the fourth generation of the family.
The vineyards cover roughly 6 to 10 hectares and are located on the Premier Cru of Vertus. The soil type is rich in chalk (belemnite chalk), which contributes to the fresh character of the wines. The estate follows sustainable viticulture (HVE level 3 and VDC certification) and plants mainly Chardonnay, with a small percentage of Pinot Noir (about 5-10%) used for rosé and red wine products.
The method includes hand harvesting, vinification in stainless steel vats and application of the Champagne method. The bottles are mechanically riddled and undergo ice disgorgement (at -27°C) to remove the sediment. The champagnes are often dosed Extra Brut, resulting in a dry and fresh taste.
The range mainly comprises Blanc de Blancs and Rosé cuvées:
- Cuvée Empreinte: 100% Chardonnay, floral and citrus.
- Cuvée Désir: Extra Brut, Blanc de Blancs.
- Millésimé: Vintages such as 2013 and 2014 (Brut and Extra Brut).
- Rosé: Made from 88% Chardonnay and 12% red wine (Pinot Noir), sometimes aged in barrels.
- Ratafia: A cherry liqueur made from unfermented grape juice.
Visitors can visit the estate at the Moulin d'Argensole for tours and tastings, where they see the production process from tirage to labelling and can taste the champagnes with local snacks.
